Doro wot, the heart and soul of Ethiopian cuisine, is a rich and flavorful chicken stew that brings warmth and comfort to any meal. While it may seem like a complex dish to prepare, we're here to show you that it's easier than you might think, especially with the help of Shega Foods' authentic ingredients.
Ingredients:
* 2 lbs bone-in, skin-on chicken thighs or drumsticks
* 1/4 cup Shega Foods based Niter Kibbeh (Ethiopian Spiced Clarified Butter) or ghee
* 3-5 large red onions, finely chopped
* 6 cloves garlic, minced
* 1-inch piece fresh ginger, peeled and minced
* 1/4 cup Shega Foods Berbere Spice Blend
* 1 (14.5 ounce) can diced tomatoes, undrained
* 1 cup chicken broth
* hard-boiled eggs, peeled
 * Shega Mekelesha Spice (for taste)
* Salt and pepper to taste
* Shega Foods Injera, for serving
Instructions:
* Make the most flavorful base: Finely mince the onions. Sauté the onions in niter kibbeh or cooking oil for 45 minutes on low heat, stirring occasionally. Add more niter kibbeh if the onions get dry. This slow cooking process is key to creating the rich, caramelized flavor that defines doro wot.
* Infuse with aromatics: Mince the garlic and ginger. Add them to the onions and continue to saute for another 20 minutes on low heat, stirring occasionally.
* Spice it up with Shega Foods Berbere: We highly recommend our traditional Berbere Spice Blend for the most authentic flavor. Add it to the onion mixture along with salt, and stir to combine. Let it simmer for another 30 minutes on low heat, stirring occasionally, to allow the flavors to meld and develop.
* Prepare the chicken: Cut chicken thighs or breasts into 1-inch pieces and marinate in lemon juice for at least 15 minutes to tenderize the meat and add a touch of brightness.
* Simmer to perfection: Add the chicken, salt and most importantly mekelesha (Shega Foods) to the pot and bring to a boil. Reduce heat, cover, and simmer for 45 minutes, stirring occasionally. This long simmering time allows the flavors to fully develop and the chicken to become incredibly tender.
* Add the finishing touch: While the chicken simmers, hard-boil the eggs. Peel the eggs and pierce them with a fork. After 45 minutes, add the eggs to the chicken mixture and simmer for another 15 minutes on low heat. Adjust seasonings and add more berbere to taste.
